Ingredients
1 1/2PoundsAsparagus, stalks trimmed
2TbspUnsalted Butter, melted
1TbspOlive Oil
1TbspMinced Garlic
1/2tspKosher Salt
1/4tspBlack Pepper
1/2TbspFresh Squeezed Lemon (optional)
1CupShredded Mozzarella Cheese
1/3CupFinely Shredded Parmesan Cheese
Instructions
Preheat oven to 400 degrees F.
Place Asparagus in 9 x 13 baking dish.
In small bowl combine: butter, olive oil, garlic, salt, black pepper. Pour over asparagus and toss to evenly coat.
Bake for 15-20 minutes, tossing halfway through.
Remove from oven & drizzle lemon juice over asparagus. Top with mozzarella & parmesan cheese.
Set the oven to Broil. Place asparagus back into oven and broil for 3-5 minutes until cheese is bubbly & starts to get toasty brown.
