Ingredients

  • 4 oz Fresh spinach (Chopped)
  • 4 oz Cream Cheese
  • 2 tbsp Sour Cream
  • 1 tbsp Mayonnaise
  • 1 Cup Shredded Mozzarella Cheese (Divided in Half)
  • 1/4 Cup Grated Parmesan Cheese
  • 7 oz Artichoke Hearts (Water or Oil- drained, chopped) *Note 1
  • 1 tbsp Minced Garlic
  • Sea Salt (to taste)
  • Black Pepper (to taste)

Instructions

  • Preheat the oven to 350 degrees F.
  • Heat a non-stick skillet (or greased skillet) over medium heat. Add the spinach and cook until the spinach is wilted (approx. 3-4 min). Transfer to a medium size bowl and set aside to cool.
  • Return the skillet to the stove and turn down the heat to medium low. Add the cream cheese. Stir until softened. Add the sour cream, mayonnaise, half the mozzarella cheese, parmesan cheese, artichoke hearts, garlic, salt and black pepper. Stir to combine.
  • Once the spinach is cool enough to touch, squeeze it several times to remove as much excess moisture as possible. Once you've eliminated as much moisture as you can squeeze out, add it to the artichoke mixture. Stir to combine.
  • Transfer the dip to a large ramekin or bowl and smooth evenly in the bowl. Top with remaining mozzarella cheese.
  • Bake for 30 minutes. Serve immediately but be careful, dip will be hot!!

Notes

  1. Make sure to squeeze the excess moisture out of the artichokes once chopped. Leaving the full water content in will water down the dip.
