Ingredients

  • 1 cup almond flour
  • 1 1/2 tbsp coconut flour
  • 3 tbsp coconut oil (melted)
  • 3 tbsp golden monk fruit
  • 1 tsp vanilla extract
  • 3 tbsp almond flour
  • 1/4 tsp sea salt
  • 1/3 cup sugar free mini chocolate chips

Instructions

  • Thourougly combine almound flour and coconut flour in bowl.
  • Stir in remaining ingredients, minus the chocolate chips, and stir well until all ingreditents are combined and smooth. (Note 1)*
  • Fold in mini chocolate chips. (Note 2)*
  • At this point, you can eat it straight out the bowl or chill dough for at least 20 minutes.
  • Once chilled, use your hands to roll into 1 inch balls. These will keep in fridge for up to a month or pop in the freezer to eat later! (Note 3)*

Notes

Note 1: Make sure to cream all ingredients together well. The better combined, the creamer your edible vegan cookie batter will taste!
Note 2: If you can only find full size sugar free chocolate chips, use them! Just adjust the nutritional values accordingly. 
Note 3: Will keep in freezer up to 6 months. When ready to eat, pull from fridge and leave out on counter 20-30 minutes, until soft enough to eat.
